An Easter to remember

I don't know why, but for some reason I was determined this year to make Easter Sunday one to remember. Maybe it's because I'm away from family and hate it when these holidays fade into the weekend like just another day off of work, or maybe it's because I love making brunch foods --- no matter the reason, I had big plans for our Easter.

I know that Bogdan misses home as much as I do, so I decided I'd try my hand at making the traditional Easter bread from Ukraine - paska. I asked Bogdan to get a recipe from his mom, and I set out to bake my first batch on Saturday. Despite a few setbacks (which included a scalded hand from grabbing hot things), the bread came out all right and despite making more than a few jokes, Bogdan said that it does taste something like the real thing. I'll take "something."


Then I planned my brunch menu. I knew I wanted to make homemade pancakes and bacon, but I also wanted something very egg-licious, so I made miniature egg casseroles in ramekins. So, after we dyed our eggs and came home from mass, I finished up the food and we set down to a delicious (and pretty) spread of food.

While we were eating and drinking orange juice, Bogdan decided we should open up a bottle of champagne that's been in our fridge for quite a long time and make mimosas. So we popped open the bubbly and finished off our brunch with style.
And so we had an Easter to remember, and a very yummy brunch. Even without a crawfish boil or bringing our paska to get blessed by the priest, we made our own little Easter memories and had a very pleasant day.
